  • 3tablespoonsmayonnaise
  • 1/4teaspoongarlic powder
  • 1/4teaspoononion powder
  • 1teaspoonchili powder
  • vegetable oil for frying

Directions

Step 1: Make the cajun sauce

  • In a small bowl, add the ingredients for the cajun sauce and mix together. Taste as you go so you can adjust the flavours to your liking.

Step 2: Make the chicken nuggets

  • Wrap the chicken breasts in saran wrap or parchment paper and pound it using a rolling pin (or mallet) to tenderize.
  • Chop the chicken into bite-sized pieces and add it to a food processor. Add salt, black pepper, cornstarch and garlic powder. Pulse until there are no more chunks of meat left.

  • Take a small bit of ground chicken and shape into a McNugget. Repeat this process until you've used up all the meat, then place in the freezer for about 30 minutes.

  • Fill a pot with 3 inches of oil and heat over medium-high heat at about 325-350°F (162°C-176°C)

  • In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, chili powder, and garlic powder.

  • Coat each nugget in the dry breading and shake off any excess.

  • Add the water and baking soda to the dry batter and whisk to create your wet tempura batter. The batter should be thin - you can add more water if needed.

  • Dip the breaded nuggets in the wet batter and then place in the hot oil. Make sure to not overcrowd them. Fry in batches until golden brown.

  • Transfer to a wire rack to let any oil drain out and then serve warm with the cajun sauce.
