Set up by Muslim-revert Bernie Utchenik and his wife, Zee Faudziah Utchenik, the stall at Timbre+ specialises in halal Southern Louisiana cuisine. Fun fact: Bernie (also known as Big Bern) used to own the famous Botak Jones chain and its halal counterpart, Botak's Favourites!

Once you arrive at Timbre+, you'd be able to spot Big Bern's with its American-style "food truck". For the uninitiated, Timbre+ is a modern and hipster hawker centre complete with live entertainment on some nights.

One of their signature dishes is none other than their Cajun chicken (from $7.80) - chicken breast is marinated in their own blend of Cajun spices then charbroiled before it's topped with melted mozzarella cheese and homemade Cajun sauce. Another Louisiana special you have to try is the Po'Boy (from $9.80)! This dish has an interesting history back in Louisiana - it used to be made by those who didn't have a lot of money would make sandwiches using French baguettes and whatever ingredients which were cheap and available. It used to be called "Poor Boys" but the South Louisiana accent pronounced it as Po'Boys. Once you order a Po'Boy, it'll be freshly cooked. The cheesesteak Po'Boy is a hot favourite - sliced ribeye is sauteed with onions, green peppers, beef gravy and cheddar cheese and stuffed in a buttered bun ?

If you're a fan of steaks and burgers, don't leave Big Bern's without trying their Prime Ribeye Steak which is well-grilled and tasty. This 200 grams of New Zealand ribeye is topped with their homemade gravy and garlic butter plus 2 sides of your choice. Pick the Cajun fries to accompany your meal!

Their burgers are also really inventive with options like pulled beef brisket, Whoopass chilli cheese (minced beef with Whoopass chilli con carne) or the simple Big Bern's Cheese Burger. For those of you staying off meat, you can also try their Impossible Cheese Burger which uses 100% plant-based Impossible meat.

So, if you're looking to satisfy your cravings for halal Western food in Singapore, why not make Big Bern's American Grill your next foodie spot?
