These Easy Recipes Are Bound To Wow Your Guests This Hari Raya 2022

1. Curry Chicken 

Nothing smells better than the aroma from a simmering pot of curry wafting through the house; it’ll get your guests drooling as they step in! No, don’t worry, you won’t take a long time to cook this curry! Ingredients:

Instructions:

  • Heat oil in a pot and pan-fry potato for about 3-5 minutes.
  • Mix chicken, curry leaves, curry paste in the pot and stir fry for another 5 minutes
  • Add in 200ml of water and let it simmer on medium heat for about 25 minutes or until all ingredients are cooked. 
  • Add in pandan leaves and let it cook for another 5 minutes.
  • Pair it with toasted bread, or white rice, and enjoy!

2. Laksa

Laksa is a quintessentially Raya dish that’s not given its due credit! It’s creamy, appetising and flavourful, which is perfect for our upcoming larger-than-life Raya celebrations ? If it’s your first time preparing this dish (we know many of you are hosting for the first time without your parents this year!), don’t worry! Preparation time: 15 mins

Cooking time: 40 mins

Feeds: 2-3 people 

Ingredients:

  • 1 packet GOLDEN CHEF Singapore Laksa Paste 220g
  • 400g Rice Vermicelli Noodles
  • 80g Fish Cake, sliced
  • 50g Bean Sprouts
  • 40g Fried Beancurd puff, halved
  • 2 Hard Boiled Egg, sliced in half
  • 6 Medium Prawns
  • 14g Laksa Leaves
  • 500ml water
  • Pinch of salt

Instructions:

  • Blanch vermicelli, fish cakes, bean sprouts and prawns separately in a pot of boiling water. Drain and set aside!
  • In another pot, mix Laksa Paste, water and bring to a boil.
  • Add fish cakes, beansprouts, prawns and fried beancurd into the laksa gravy.
  • Let it simmer for about 10 minutes and add in a pinch of salt.
  • To serve, pour laksa gravy over a bowl of cooked vermicelli and garnish with laksa leaves.
  • Dig in!

3. Fried Macaroni

Ingredients

  • 100g Macaroni Pasta
  • 5 pieces of Dried Chilli (Soaked in water)
  • 100g Chicken Breast (Marinate with 1 tsp turmeric powder, pinch of salt and 1 tsp of GOLDEN CHEF 100% Pure Sesame Oil
  • 2 cloves of garlic (Minced)
  • 2 tbsp GOLDEN CHEF Premium Oyster Sauce With Dried Scallop 510g
  • 1 Tomato (Cut into cubes)
  • 50g Chye Sim (Separate stems and leaves)
  • 4 Prawns
  • 2 tsp tomato sauce
  • 50ml Pasta Water
  • Salt, to taste
  • 2 Red Chilli (Sliced for garnish)
  • 2 pieces of Banana Leaf
  • 2 tbsp Fried Shallots

Instructions:

  • Cook Macaroni in a pot of water, seasoned with some salt. 
  • Cook for 1 minute less than what is indicated on the packet. 
  • Once it is done, keep some of the pasta water and drain the rest. Soak cooked macaroni in cold water.
  • In a food processor, blend dried chilli with a tablespoon of water.
  • Add oil into a pot and pan fry marinated chicken breast until cooked through. Remove and set aside.
  • Heat up oil in a wok. Once hot, add in garlic, 1.5 tsp of blended chilli paste and 1 tsp of oyster sauce. Stir fry until fragrant.
  • Once fragrant, add in cooked chicken, tomato, chye sim stem, prawns and stir fry till cooked through. 
  • Add in 50ml water and 1-2tsp of tomato sauce. Mix well.
  • Add cooked macaroni, chye sim leaves and pasta water (if the mixture is too dry). Taste and add salt or sugar if needed.
  • Serve on a piece of banana leaf and garnish with red chilli and fried shallots. Enjoy!
