SAIDO is a boutique vegan Japanese restaurant founded in 2018 by Chef Katsumi Kusumoto, located in a quiet street in the stylish Jiyūgaoka neighborhood of Meguro-ku. It offers a refined washoku experience—traditional Japanese cuisine—but reimagined entirely plant-based: no meat, fish, eggs, dairy, refined sugar, or even the “five pungent roots” (garlic, onions, leeks, etc.) are used.
