An Easy Halal Italian Biscotti Recipe You Should Make At Home

Have you ever had a traditional Italian biscotti before? Light, crunchy and perfect for dunking in your favourite cup coffee, these twice-baked cookies are not only delightful to eat but they’re simple to make too! With no need for any special cooking equipment or fancy baking technique, get ready to bring some Italian flavours to your kitchen with this easy halal biscotti recipe that’ll have you saying delisiozo! ?

Ingredients (yields 36)

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ cup lemon sugar (you can make this by pulsing lemon zest from one lemon and sugar in a food processor)
  • ¼ cup brown sugar
  • 2 eggs, room temperature
  • ¾ tsp vanilla essence
  • 1 tbsp lemon juice

Directions

  1. Preheat the oven to 160° C and place the rack in the centre position. Line the baking sheet with parchment paper and set aside. 
  2. In a bowl, combine the dry ingredients - flour, baking powder, lemon sugar, and brown sugar - and set it aside.
  3. In a different bowl, stir eggs, sugar, vanilla essence and lemon juice together until the mixture becomes slightly thick. 
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Using a large spoon, scoop half of the dough onto the lined baking sheet. Then, place the other half next to it about 3 inches apart. Wet your fingers with some water and shape both the dough into logs. 
  6. Pop the baking sheet in the oven and bake the logs of dough for about 30 minutes or until light golden brown. Remove from the oven and let them cool for a bit.
  7. Transfer the logs to a cutting board and with a serrated knife, cut them into ¾ inch slices at an angle. Check out the video below to see how it’s done: 

  1. Place the slices back onto the baking sheet, cut side down, and bake them a second time for another 10 to 15 minutes. Turn them over at the halfway mark.
  2. Remove from the oven and let them cool completely on a wire rack. Serve and enjoy!
