Have you been getting your dose of durian now that the season is in full swing? If you are, save a few extra pieces to make yummy desserts like cakes, crepes and tarts. Of all these sweet treats, serawa durian (also known as pengat durian) is popularly enjoyed by many especially during the fasting month. But you don't have to wait till the next Ramadan rolls around to get it at the bazaars. It only requires a few ingredients and is very easy to whip up at home, so let's get started! Ingredients (serves 4)
  • 300g durian paste
  • 70g palm sugar, shredded
  • 100ml water
  • 300ml coconut milk
  • 15g salt
  • 10ml pandan flavouring
  • 2 pandan leaves
Directions
  1. In a pot, combine all the ingredients and cook over slow to medium heat.
  2. Allow it to simmer for 10 minutes until all the ingredients mix well and become thick.
  3. Serve with bread, roti jala or cooked glutinous rice.
