What a lucky night it was, with Rafi Suhairi, a tenacious celebrity chef with 17+ years in the industry and the creative force behind Black Burn, teamed up with his skilled chefs, Sufiyan and Suriya, to cook up an impressive thoughtfully crafted woodfire meal for me. Ready to salivate?

The MUST-HAVE Starters

The tantalising aroma of Bone Marrow Brulee sizzling on a wood fire and then torched immediately was the first thing that made me salivate! I initially thought it was the main course, but to my surprise, it was just the starter. As I whiffed in the savoury woody aroma, a citrusy scent drew me back to the wood fire, revealing the Citrus-brined Chicken Wings, perfectly seasoned with Chrysanthemum Jelata—truly one-of-a-kind and finger lickin’ good till the last bone!

I’m a big fan of sweet corn, and these Charred Corn Ribs did not disappoint! They were generously dusted with Gunpowder spices and served atop a creamy Roasted Sesame Aioli, which paired perfectly as a sauce for the corn. Make sure you try the Corn Ribs!

I was in for a real treat with Black Burn's Chef's Special—a Mixed Platter featuring tender Wagyu Short Ribs and the freshest Tasmanian Salmon of the day. This platter came with a selection of side dishes, including locally sourced Sustainable Fungi (mushrooms), mixed vegetables, sourdough and three incredible sauces: Beef Jus, Cilantro Sauce, and the one-of-a-kind Coco de Mole Sauce, a unique blend of chocolate and spices. You can also customize your sides and sauces by referring to the menu below.

The Chef's Special platter is priced according to the market rate, with the Chefs offering recommendations for the best meat and catch of the day to satisfy your taste buds.

You can choose from at least four different types of beef, including Picanha, Hanging Tender, Ribeye, and Wagyu Short Ribs, with a minimum order of 200 grams per type—just the perfect amount for me to enjoy all by myself.

For sharing, the Black Burn Tomahawk with Bone (1.1kg, Market Price) is available exclusively from Friday to Sunday.

Another item priced based on market rate is the Catch of the Day, offering the freshest fish and seafood available. Be sure to order quickly if you're after the freshest cuts in the North!

The Non-Cliché Coffee Shop Desserts

Just when I thought I had finished indulging in the Wagyu, Salmon, Chicken, and Corn Ribs, I was surprised with the underrated item of Black Burn's menu—desserts!

The Sakanti Balinese Chocolate 68% and Panna Cotta were delightful, but it was the Chocolate Mousse that truly took me by surprise. Mixed with Smoked Sea Salt and topped with a Fiery Chilli Padi, I wasn’t expecting to enjoy it.

I’m not usually one for adventurous flavours, so I even had tissues ready in case the mousse had an odd texture or taste. To my astonishment, I loved every bite and kept wondering how a dessert could taste so amazing!

The Panna Cotta was another unexpected delight, breaking away from the typical Mango & Vanilla Pod Compote and instead topped with Coconut Kerisik, which I savoured until there was not a trace left! Don't miss out on Black Burn’s desserts while you're here!

From the starters to the mains and all the way to the desserts, watching the talented chefs expertly prepare each woodfire dish gave me a deeper appreciation for the rich flavours of meat cooked over a woodfire, which I truly relished.
