It was a privilege for me to meet Chef Melvin Lim, the Executive Chef and creative force behind the culinary team at Aloft Singapore Novena. He has expertly curated the Around The World Festive Menu, offering a selection of festive delights from 20 countries which is available from 15 November 2024 to 1 January 2025.

With an empty suitcase (or stomach!), I jet off to the USA, indulging in a show-stopping, smoky Slow-Cooked Brined Whole Turkey with Christmas Nut Stuffing, before making a tasty stopover in Australia for its flavourful BBQ Beef Ribs with Smoked Paprika. The Christmas Nut Stuffing was amazingly delicious and I almost missed my flight to Europe for the wonderful Christmas Tradition Dishes!
The long flight left me absolutely FAMISHED, and as soon as I touched down in Spain, the irresistible aroma of Seafood Paella Valenciana filled the air— a perfect blend of seafood and saffron-infused rice. I eagerly dug in, savouring every grain of this flavourful dish.
The travel wanderlust in me found myself transported to Italy for the famous Linguine alle Vongole (Pasta with Clams) and Chicken Piccata each bite leaving me exclaiming, "Mamma Mia! Mamma Mia!" in pure satisfaction. It was a serendipitous adventure as I stumbled upon the Feast of Seven Seafood, Italy’s classic Feast of the Seven Fishes, traditionally enjoyed on Christmas Eve — The Slipper Lobster Thermidor, cooked in a luscious, creamy sauce, was the standout dish of this European journey!
Inspired by the Moroccan and Mediterranean-themed design of 21 on Rajah, I whisked off to Morocco in search of its stunning tiles and the chance to try the Signature Braised Lamb Shank—an incredibly juicy and fork-tender lamb.
Coming Home to Local Signature Dishes for the Homesick Traveller
After savouring a range of international flavours, I found myself longing for the familiar taste of local delicacies. The craving for our signature Slipper Lobster in Chilli Crab sauce with Deep-Fried Mantou, the unforgettable flavours of Singapore Char Kway Teow and slurping to Singapore Nonya Laksa quickly took over.
Memoirs of Appetisers, Seafood on Ice, Sushi & Sashimi
Looking back on my worldwide food adventures, I remember the unique appetizers I enjoyed in Spain, like the Shrimp Gazpacho Shooters, which offered a refreshingly vibrant flavour.
Also etched in my memory are the delicate flavours of the freshest poached tiger prawn, mussels, Yabby - freshwater crayfish, and the melt-in-your-mouth salmon and tuna sashimi.
While the memories of global food adventures are sweet, the real indulgence awaits at the dessert table of 21 on Rajah!

Who can resist desserts, especially with a Milk Chocolate Fountain ready to be drizzled over cakes, cookies, and bread & butter pudding? Delivering Convenience and Exceptional Comfort
21 on Rajah, situated at Aloft Singapore Novena, stands out by offering added convenience for public transport users, with a free shuttle bus service to and from Novena MRT station. Alternatively, you can hop on a bus just a few stops away.
Additionally, for Muslim guests wishing to observe their prayers, Aloft Singapore Novena offers dedicated male and female prayer rooms, each equipped with an attached toilet. Guests can request the prayer room keycard from the restaurant staff.
